 Ingredients

  • 1 cup all purpose flour
  • 1 tsp baking soda
  • 1/4 cup peanut butter
  • 1/4 vegetable oil
  • 1 cup unsweetened coconut flakes
  • 1 tsp vanilla extract
  • 2 Tbsp water
  • 1/3 cup honey
  • 1 egg

 Ingredients for Frosting

    • 1 container whipped cream cheese
    • 1 jar of baby food of your choice (we used pear)

Directions

Preheat your oven to 350 degrees.  In a large bowl whisk together the flour and baking soda.  Add all remaining ingredients and mix together with a hand mixer.  Spray your pan with a non-stick spray.  I use bakers joy!  This batter is very thick so you will need to spread it around with a spatula.  Once you have the batter level throught the pan, place it in the oven for 20 – 30 minutes.  Depending on the thickness of your cake in the pan it will take more or less time.  Once you can insert a toothpick and pull it out clean, your cake is done!
